I do not know how authentic it dare to be. Here is my version of ceviche.

1/2 pound of cray fish,
1/4 pound of pineapple, diced
1/4 piece of white peach, diced,
1/2 mango, diced,
cilantro, cut
1/4 piece, purple onion, diced,
3 tomato, seedless, heartless, diced
1 avocado not too soft, diced
4 limes' juice
salt, pepper,

Marinate the cray fish in lime juice overnight,
The next day, mix everything.
Let rest a few hours. The first picture is immediate after making.
The second picture is a few hours after. So much improved in floavor.

Haiying's tip:
Cut everything as small as you can.
Let rest it better than immediate.
