I fancied some ceviche then we searched wikipedia and some other recipes. We did this very conservative version.

1/4 pound of fresh rock cod fish,
1/2 cup of fresh garden lime juice,
2 tomatoes,
1 small bunch of coriander
1 not too soft avocado
1/2 purple onion,

cut fish to small dice,
squeeze lime to make 1/2 cup of juice,
mix fish and juice to let marinate over night in the refrigerator, the fish is raw but cooked in lime juice.

The next day,
cut avocado to dice,
clean tomatoes to get rid of the seeds, cut to dice,
cut coriander to small pieces,
cut onion to dice and rinse to reduce its stink,
take out the fish and drain the juice.

Combine everything and eat.
