I love eggplant. Boil, grill, bake, fry, stew or steam, it never fails.
Olivier check online for recipes and made this one.
2 table spoons of tahini,
1 piece of garlic,
1 fresh lemon's juice
salt, pepper, olive oil
Bake eggplant complete in the oven of 350 for 30 minutes, till the eggplant is soft,
Use spoon to take out the eggplant meat, and discard the skin,
Blend with garlic, tahini, salt pepper, lemon juice
let cool and serve with olive oil and parsley.
For people who can endure garlic, it is good like this.
