A couple weeks ago, the boys were on school trip to Washington and Coloma. Olivier took me to Redwood city's Martin's West. I had a desert there. I realized that all my previous baking big time lacks sugar. I changed this time, and it was good.
Ingredients:
1 stick of butter, 100g, or 4 oz, melt
2 cups of all purpose flour,
1 sachet levure chimique,
4 eggs,
4 full table spoons of sugar,
1/2 cup of homemade yogurt,
1 table spoon of vanilla extract,
1 cup of fruit cake mix

Mix everything, let rest for a few minutes
Bake in oven 350 for 40 minutes.

Rice pudding


 

Cooking some rice, ate and left leftover. Add in milk, simmer for 20 minutes or so. Add sugar when serve. The dust of chocolate is for decoration. Well, good enough to eat as well.

Taste week. Baked marble cake for the whole 4th grade, about 60 kids. Loved it.

Flour, butter, yeast, egg, vanilla, yogurt, sugar for the white cake,
brownie mix with oil for the black.

Super moist.

Ugly brownie and its improvement



Ingredients:
1 bag of brownie mix,
1 stick of butter,
2 egg yolk

Cooking:
Preheat oven to 350,
melt butter and cool down,
mix egg yolk,
mix in brownie mix briefly
Bake for 15 - 20 minutes.

Done.

Beef for tacos

Minced beef for tacos
For the tacos party, we prepared minced beef, but since we had so much more other food, this one was not even on table. It deserved a blog in any way.

Ingredients:
2 pounds of ground beef, (as usual, if you are taste concerned, use beef with fat, if health freak, use lean)
1/2 onion diced,
1/2 capsicum, diced,
salt pepper and spice, such as oregano, tarragon, parsley, basil, celery, etc
1/4 cup of wine,
cooking oil

Cooking:
Heat pot, 
add onion and capsicum to cook for 5 minutes,
add meat and spices and wine to cook for 1 hours in slow fire.

The next day, we blended it with ice. A homage to Sicily.

Ingredients:
1 bowl of Fruit of any you can find, cut and marinated in its own juice for a day,

Saturday morning, boys ate bacon.
I used the pan and add some Chinese cabbage and pasta. Here we got it.

Ingredients:
1/4 pound of pasta angel hair,
one pound of Chinese cabbage,
salt pepper cooking oil

Cooking:
Cook pasta according to its time indication on package,

Meanwhile,
Heat pan,
add cooking oil,
add vegetables,
salt pepper
Add cooked pasta,
mix and cook a couple of minutes more.



Apricot jam

The making
Time to make apricot before the season is over.
Today I went to store, the apricot sold for $1.50 per pound comparing to the peek season of $0.50 per pound. But today's ones were mature and firm, perfect for making jam.

Ingredients:
2 pounds of jam,
1/2 pound of sugar,
a pinch of salt.

Cooking:
Heat pot,
open apricot with hand, take out seed, put into pot,
add salt, sugar,
cook in slow fire for 3 hours or until the water evaporated enough.

Tip:
Keep stirring from time to time. It avoids burnt bottom and accelerate the evaporation.

Coulis de fruits rouges and fruit salad








To save the blackberry from backyard and serve it for better purpose, we cooked it to make into coulis de fruits rouges.

Ingredients:
1 plate of blackberry from backyard, about 2 pounds,
1/4 pound raspberry,
1/4 pound strawberry,
1/4 pound blueberry,
a few drops of lime juice
a few stripes of lime zest
1/2 pound of sugar

Cooking:
Put everything in pot, cook in medium slow fire for 1 hour, keep stirring,
Drain through a colander.

Usage:
Topping fruit salad, or ice cream.

Cleaning pot:
As the pot may get sticky, you can pour in boiling water and cool down to drink as fruit tea, 
Or, you can add in yogurt to make marbling design.


As for the fruit salad,
Get any fruit you have and cut to small pieces, add a few drops of lime juice, let rest for a couple of hour.




Marinated beef skirt steak


Beef skirt steak is a less expensive cut,  relatively tough to bite with lots of fiber, but it has flavor.

To make the best of it, I marinate.

Ingredients:
2 pounds of beef skirt steak,
salt, pepper, all kinds of spices,
All kinds of spices you have and like, I used cumin, anise, five spice power, parsley, taragon, rosemary, oregano, celery salt, as well as some others that either I don't know name or forger name,
fond de beuf,
salt pepper, wine, soy sauce
Prune sauce. To made devil on horseback, I marinated the prune with water and armagniac, I add its overnight liquid into the marinating
All fresh spices from backyard,
onion,
jalapeno, 
ginger,
garlic

Cooking:
after two days of marinating, I put on grill.

How to grill, that is man's job. My husband knows how much time and fire it needs.

Angel hair with yellow chard


Ingredients:
1 bunch of yellow chard, from Mountain View farmers market, cut, or break with hand,
salt pepper cooking oil,

1/4 pound of angel hair pasta,

Cooking;
boil angel hair pasta for two minutes,

At the same time,
Heat pot, put cooking oil, yellow chard, salt pepper to cook for two minutes
Take paste out and put into chard to cook together for 2 minutes,

A good marriage.



Ceviche


I do not know how authentic it dare to be. Here is my version of ceviche.

Indregients:
1/2 pound of cray fish,
1/4 pound of pineapple, diced
1/4 piece of white peach, diced,
1/2 mango, diced,
cilantro, cut
1/4 piece, purple onion, diced,
3 tomato, seedless, heartless, diced
1 avocado not too soft, diced
4 limes' juice
salt, pepper,


Cooking:
Marinate the cray fish in lime juice overnight,
The next day, mix everything.
Let rest a few hours. The first picture is immediate after making.
The second picture is a few hours after. So much improved in floavor.

Haiying's tip:
Cut everything as small as you can.
Let rest it better than immediate.

Double cooked pork

This food is beauty only in its lover's eyes. I mean it does not look good, but very solid good for pork eaters. It takes more than 10 hours till coming into mouth, but super duper easy and cheap and unhealthy.

Ingredients:
 3 pounds of cheap boneless pork, can be anywhere, neck, butt or shoulder,
All kinds of spices you have and like, I used cumin, anise, five spice power, parsley, taragon, rosemary, oregano, celery salt, as well as some others that either I don't know name or forger name,
fond de beuf,
salt pepper, wine, soy sauce

Cooking:
Put meat and everything think in pot, fill with water
Boil in medium strong, fire till boiling,
slow down fire to simmer for a few hours, let's say 3,
Stop fire, 
Leave as is.

The next day, take out meat, cut pork into think disc, about 2 cm thick,

Heat pan, put in cut pork, add a spoonful of its own soup, 
Press,
let juice evaporate, 
turn around,
press.

You get double cooked, moist, succulent pulled pork.


Baba ghanoush

I love eggplant. Boil, grill, bake, fry, stew or steam, it never fails.

Olivier check online for recipes and made this one.

Ingredients:
4 eggplants,
2 table spoons of tahini, 
1 piece of garlic,
1 fresh lemon's juice 
salt, pepper, olive oil
parsley

Cooking:
Bake eggplant complete in the oven of 350 for 30 minutes, till the eggplant is soft,
Use spoon to take out the eggplant meat, and discard the skin,
Blend with garlic, tahini, salt pepper, lemon juice
let cool and serve with olive oil and parsley.

Hints:
For people who can endure garlic, it is good like this.
For people who enjoy without garlic, go without.

After party rescued soup


I call it after party rescued soup because the ingredients are rescued from after party throw away.

Here is the ingredients:
Tomato heart and seeds, rescued from salad and ceviche tomato,
cilantro, onion, same above,
salsa, 
grilled beef, left over from tacos party,
same above,
soup is the rinsing of pot, may it be meat or veggie, the fond is the concentration base of flavors,
fresh veggie such as carrot or cabbage,


Cooking:
put everything together, add water, bring to boil
add fresh veggie, such as carrot, cabbage or your preferrence,
add egg.
stop fire,
the egg is so tender.

Bacon wrapped prune




Sweet and savory is always a winning pair. So is this one.

Ingredients:
6 pitted prunes
3 slices of fully cooked bacon

Cooking:
Soak prunes in hot water a couple of hours,
cut bacon in half, and wrap the prune, fix with a tooth pick
Bake in oven 375 for 5 to ten minutes.

Experience for mistake:
It is better to spray a little bit of water on the wrap before baking to avoid drying and stiffness.

Mushroom noodle



There is a mushroom stand in Mountain View farmers market with all kinds of fresh mushrooms. Each time I try something new. This time, it is so new that I do not even know the name.

It is white with yellow top. I cooked with salt pepper oil, and a touch of olive oil at the end.

Cooking for the mushroom:
Ingredients:
1/2 pound no name mushroom
 salt pepper cooking oil, olive oil and white wine
Cooking,
Put everything in the hot pot to cook for 20 minutes.

The veggie pasta:
Ingredients:
1 pound of squashes,
1/4 pound of angel hair pasta
salt pepper cooking oil

 Cook pasta in boiling water for 2 minutes
At the same time, cook the veggies
put squashes and cooking oil, salt pepper in hot pot to cooking for 10 minutes, mix in paste to cook another 2 minutes
