Vertical cooking - steaming asparagus

We had dinner Chez Panisse. The Asparagus was crunchy and tasty. So what, Olivier checked internet and learned vertical cooking. Boil the bottom and steam the top.

We loved it.

Then a few days later, today is April 22, 2012. We did it again with sauce hollandaise.
