Stew of capsicum, eggplant and white/yellow squash

Sunday, there is Mountain View farmers market. There is nothing better than the fresh vegetables from the producers hand.

Nicely chop everything, put in pot, add cooking oil, herbs, cover up. Ten minutes later, open the lid to see and smell the aroma of vegetable melody. Stir, everything is softened to perfection.

No water is added.

Serve.

Add salt and pepper on table to enhance the flavor of the goodness.
