Potato salad

Potato salad

The first time I saw something called salad was potato salad. That was back in China some decades ago. Salad was such a foreign word. The was potato, apple, egg and mayonnaise. It was so hard to make mayonnaise because we did not have mustard. I forgot what we used in place of mustard.

Today, we have some left over boiled potato from yesterday. My teeth are recovering with less pain. So I use the two remaining cucumber, 3 potato and make a potato salad:

for mayonnaise:
1 egg york,
one cup of salad oil,
one tablespoon of salad oil
salt, pepper to taste

For salad:
2 Persian cucumbers, peeled and diced
3 potatoes, peeled and diced
3 hard boiled eggs, peeled and diced
salt, pepper to taste

In a bowl, mix egg york and mustard, add pinch of salt, stir well
add in oil spoon by spoon, mix well till it forms a good emulsion.
Add in diced potato, cucumber and egg
Mix will and serve
