Eggplant with eggplant and eggplant

Since dental surgery, my love affair with eggplant has started.
Today, as another day, I chopped eggplant and put in pot and ten minutes later, a pot of mushy eggplant comes out.
We have some arugula salad with my julienned carrot. Add up for decoration.

Ingredients:
2 large eggplants, chunky chopped
cooking oil,
salt pepper to taste
herbs to taste

Cooking:
Heat pot, add eggplants, add herbs, (parsley oregano here), oil, cover and cook for 5 minutes,
Stir and cook for another 3 minutes
Serve
Decorate with arugula salad
