Caramel orange skin

The organgier in our backyard is fruiting. I love every bit and bite of our own home produce and decide to preserve even the skin of the orange.

We ate 6 oranges, put the big orange skin in pot, add 2 cups of sugar, NO WATER ADDED, cover, simmer in the slowest possible fire for 2 or 3 or 4 hours. Then I got this caramelized orange skin.

I can use it for cooking meet or soaking in tea.

The caramel is bitter with the bitterness of orange skin. So good.
